Since my endoscopy & colonoscopy and since finding out that I have yet again another corrosive gastritis my husband has been cooking tummy friendly dishes for me like this soup.
The soup was easy to prepare. All you need is your pot, burner, and a blender then off you go.
This soup is healthy, delicious, and nutritious with a natural sweetness to it. It is high in fiber that I don’t need to take any laxative to pass motion. This is good as kid’s food, just go easy with the black pepper powder. To make it vegetarian, just remove the milk from the ingredients.
CARROT & POTATO SOUP
Potatoes, peeled and diced – 2 medium
Carrots, peeled and diced – 1 medium
French Beans, diced – a few strings
Evaporated Milk – 1/2 c
Onions, diced – 1 medium
Garlic, peeled – 3 cloves
Black pepper powder
Salt to taste
Water – 3 c
1.Place the potatoes, carrots, french beans, garlic, onions, magi magic, 1/2 tsp of salt, and water in a pot and bring to a boil until the potatoes are soft.
2. Place the cooked veggies including the broth in a blender. Pour in the evaporated milk. Blend until the mixture is smooth.
3. Transfer the mixture into the same pot and let it simmer under low fire for at least 5 minutes or until the soup is thick and bubbly. Adjust taste as needed.
Serve with bread
