Chili Hot White Beans and Pork

Today is beans day –  white beans for lunch and white beans for dinner.  
We’ve been eating fish and veggies since  we started on our special diet and it did me good, yes.  My bowel movements have been superb.  I defecate at least twice, sometime 3 times a day and that is every single day for the past almost 4 weeks and I feel so fresh and relieve from the inside.  I still have abdominal pains but tolerable, to think that I’m out of the meds given by the gastroenterologist.  I’m also losing weight which is amazing since that is precisely the reason why I came up with this diet & fitness program.
The thing is, I’ve developed some nasty rashes on my right leg and my left arms which normally appears after I eat shrimps or any food that my system doesn’t approve of.  My husband suspects that it might be because of the fishes.  To quote Frederick’s explanation:
“Fish sometimes can cause allergies specially when taken in high dosage.  And since you’ve been eating fish everyday for a long time now, your body can no longer contain the build up of toxins / allergens.  That’s the cause of your allergies.”
The first time he explained that to me was 2 weeks ago and yet I continued eating fish as I believe that fishes are healthier protein sources than red meats and other white meats.  I’m trying to avoid saturated fats you know.  The thing, again, is that I eat fish not just once but twice a day for 5 days a week I think.  That’s why when I complained to him last night that my allergies are worsening, he scolded me for not listening to him and advised me to eat as many fish as I like. So cynical of him (evil face with my eyebrows meeting)
So there’s the story, I’ll have to take a break for a while, may be 2 days, from eating fish.  So I decided to buy beans.  I bought kidney beans, black-eyed beans, mung beans, and soya beans.  I still am not sure how to cook the other beans and since we still have white beans on stock I decided to start with that.  
This white beans recipe is Mexican inspired.  Just prepare a pitcher of water because you’ll need it definitely to cool you down after a spoonful of this dish 


White beans – 200 g.
Minced pork – 200 g.
Onion, diced – 1 large
Garlic, crushed – 5 cloves
Pickled Jalapeno – 2 tsp
Red hot chili – 3 pcs or more as you desire
Oregano, dried and crushed – ½ tsp
Cumin – ¼ to ½ tsp (as you desire)
Salt – 1/2 tsp
Sugar – 1 tsp
White Pepper, finely ground – 1/8 tsp
Canola oil – 2 tsp
Cooking Procedure:
  1. Wash and soak the beans in water over night.  I did mine for 24 hours.
  2. Drain and wash soaked beans. 
  3. Place the beans in a pressure cooker and add water just 1 inch above the beans.  Boil it under pressure for 10 minutes.  Release the pressure from the cooker and open it.  Check if the beans has enough water.  Add more water (1/2 inch above the beans).  Cook under pressure for 10 minutes again or until the beans are soft but are still whole and not mushy.  Drain and set aside the beans and the broth
  4. Heat oil in a sauce pan and sauté the garlic.  Add the minced pork when it’s fragrant.  Stir.
  5. When the pork turns to a light brown, add the onions, red chili, and jalapeno. Stir and let simmer for at least 2 minutes.
  6. Stir in the beans and season with cumin, oregano, salt, and pepper.  Add at least ½ cup of the broth.  Let it simmer for another 2 minutes
Serve along with blanched spinach on the side
