Tilapia with Enoki Mushroom in Lemon Soup

This is Frederick’s fish in sour soup using lemon as the source of its tangy flavor.  He doesn’t want to use the ready-to-use sinigang mixes so he concocted his own sour flavor and the result was a healthy soup that is deliciously not-so-sour with a delightful unique citrusy  taste which you cannot find in usual sinigangs.  

The enoki mushroom is also a good addition to the soup.  We both like this thin white mushroom because of it’s gummy, chewy, yet silky texture and it is tasteless so it doesn’t ruin the flavor of  lemon soup.   Try it for a change 🙂

Tilapia, sliced to 3 – 1 whole
Lady Finger – 20 pcs
Enoki mushroom – 100 g.
Onion, diced – 1 medium
Ginger, crushed and diced – 1/2 of a thumb size
Ripe Tomatoes, dice – 1 large
Lemon juice from 1/2 – 1 fruit
Salt – to taste
Water – 1 L
Maggi Magic Sarap – dash
Cooking Procedure:
1.  Put the water, tomatoes, onions, ginger, salt, ground pepper, and maggi magic sarap.  Bring to a boil.
2.  Add the lady finger and bring to a boil.  After 2 minutes, add the tilapia and bring to a boil until the fish is cooked.  Adjust the taste by adding more salt and pepper or more water.
3. Remove from fire and stir in the lemon juice.

Dish out and enjoy 🙂
