Kinilaw na Tenga ng Baboy (Boiled Pig’s Ears in Vinaigrette)



My husband Frederick cooked this last Monday, a day right after new year.  He made it as an appetizer, munching on it every meal for 5 days.  He keeps it in the fridge and eats it cold, straight from the fridge.

This is a delicious appetizer and most of the time, this is eaten alongside beers or any other alcoholic beverages that Pinoy’s enjoy.

Ingredients:

Pig’s Ears – 4 pcs.
Pork Cheeks – 1 pc.
Onion, chopped – 1 medium
Apple Cider Vinegar
Balsamic Vinegar
Calamansi Juices from 5 pcs of fruits
Salt and pepper to taste
Red hot chili, chopped

Cooking Procedure:
1. Boil pig’s ear for 5 minutes in a pressure cooker. Drain and chill at least 5 hours
2.  Slice pork thinly (¼ inches by ¼ inches)
3. Add the rest of the ingredients and adjust sale and pepper to your liking.
