Potato Soup

Last Sunday  was a cold rainy day yet we had quite an adventure.  Despite the fact that our day didn’t start right due to the the service disruption at the MRT red line, my husabnd Frederick and I still had a great time. We watched Mission Impossible – Ghost Protocol on imax, had an enjoyable lunch at Jack’s place, had an informative time at the Serangoon Public Library, and Frederick prepared a splendid supper for us. I couldn’t ask for anything more for being blessed with a wonderful and gorgeous husband who is super duper caring, loving, optimistic, a good cook, and who cooks for his wife.  Lucky me 🙂 Thank you Dear mmmuah.

It was my husband’s turn to cook for supper last Sunday 🙂 He volunteered as he wanted to impressed me with his potato soup he got the idea after we had lunch at Jack’s Place. So come supper time, he served me this sumptuos meal featuring his potato soup.  He said that I was his inspiration for this meal coz he wants to serve the best for me 🙂 Sweet isn’t it?For a cold rainy night, this hot potato soup will keep you warm and comfortable during this kind of weather.  Here’s my husband Frederick’s recipe he made for me. This is creamy and delicious and Allen (Airene’s son) loved it, he in fact requested Frederick to cook more next time 🙂



Potatoes, peeled and sliced –  2 small
Potato flour – 30 g.
Evaporated Milk – 2 tbsp
Onion, diced – 1 small
Butter – 1 tbsp
Salt – dash
Maggi Magic Sarap- dash
Water – 3 to 4 cups
Powdered white pepper – dash
Leeks – chopped

Cooking Procedure:

1. Put the potatoes, onions, salt, white pepper, and water in a pressure cooker and pressure cook for 15 minutes, start timing from the moment the cooker whistles.
2. Transfer the potato mixture including the broth in a blender.  add the rest of the ingredients except for the leeks and blend until you get a smooth consistency.
3. Transfer the potato mixture into a pan and let it simmer under medium fire.  Stir continuously.  Adjust water depending on the thickness you want to achieve.  Let simmer for 5 minutes or until thick.

Makes 3 servings.  Here’s the estimated Nutritional values per slice of loaf based on the ingredients used.
